One of my dream kitchen inspirations is the picture above. I’ve always loved a breakfast nook and kitchen island. Maybe a daybed and hanging chairs outside will complete it! If this was open it would have been better because I like to cook and still be able to talk with my family or watch TV, for example. Soon – in our dream home. Soon!

Yummy White Chicken Enchiladas

I have been seeing this recipe pinned all over Pinterest with comments that it actually tastes good and is so easy to cook so I figured I might as well give it a try – I am so excited! We are invited to a BBQ party of a friend who is celebrating the finishing of her backyard renovation and the upgrade of her outdoor furniture so I will be bring this recipe!

Chicken enchiladas with green chili sour cream sauce
*These are seriously so so good*
10 soft taco shells
2 cups cooked, shredded chicken
2 cups shredded Monterey Jack cheese
3 Tbsp. butter
3 Tbsp. flour
2 cups chicken broth
1 cup sour cream
1 (4 oz) can diced green chillies

1. Preheat oven to 350 degrees. Grease a 9×13 pan
2. Mix chicken and 1 cup cheese. Roll up in tortillas and place in pan.
3. In a sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly.
4. Stir in sour cream and chilies. Do not bring to boil, you don’t want curdled sour cream.
5. Pour over enchiladas and top with remaining cheese.
6. Bake 22 min and then under high broil for 3 min to brown the cheese.

Flavored Water

I am not aiming for a yoga instructor certification but I am aiming for a healthier body. One of the things I am constantly challenged with is drinking enough water to keep me hydrated. I just always fall a little short of meeting my daily requirements. I am also a big fan of coffee, soda and flavored juices so drinking water is a bit blah for me.

FRUIT WATER

1 each of the following fruits: apple, lemon, orange, pear
4 large strawberries
Handful of raspberries
Handful of mint leaves
1 half-gallon of water

Cut large slices or thin wedges of each fruit; place them in a large glass pitcher and add cold water. Refrigerate 2 hours and serve over ice in tall glasses.

I might just give this a try!

Slow Cooker Recipes

The kids’ schoolyear is about to end in two weeks and I am sure that they will miss their school playground equipment if not their lessons. We are now looking for summer lessons we can enroll them in but I am more preparing for the summer ahead at home, especially since our maid of two years is leaving. My kids are aged 11 and 6 so I think we can manage – it’s the cooking part that will be a huge problem. I am now looking into a lot of throw them in and let it stew recipes/crockpot meals to help me get through.
