Creative Menu Planning and Presentation

Ever since vacation started I have been trying to be creative with my menu planning and make allowance for a lot of healthy snacks since I have two kids with me the whole day. I really want to fatten them up in preparation for the next schoolyear. It’s hard, given that I really don’t like cooking – but what can I do? I have to do it for my kids.

One of the things I have realized though is the fact that my kids love finger foods – a lot. So snack time becomes like a main meal because of preparation. I stock up on fajita wraps and pizza dough to make pizza (tomato sauce, cheese and ham) and soft tacos (these are primarily for me and the husband) and it really is so easy to make. They devour it like a hungry pack of wolves.

Also presentation is very important. I just realized how visual appeal can have such a great impact on my kids. My son is very picky eater – his hotdogs and fried chicken needs to be free from burnt areas or else he would not eat it. If it looks dirty, he wont it eat as well.

This nice beechwood Fruit hammock from Bed Bath and Beyond would be great as a table centerpiece and presenting bananas, dont you think? My kids are like monkey – they so love bananas!
